Easier Than Pie Blueberry Turnover

This recipe is so easy, you can quickly put it together before supper. Also doesn't take a whole lot of ingredients.

Normally I like to make everything from scratch but I also like to keep somethings on hands for just a quick dessert plan if I feel like making something. So this blueberry turnover is exactly that, took me about half hour tops start to finish.




 

Ingredients

  • 1 package Puff Pastry

  • 1 can Blueberry Pie Filling

Icing

  • 1/2 cup Icing Sugar

  • 2 TBSP Milk

  • 1 tsp Vanilla

  • Blue Food Colouring (optional)


 


I had added the blue food colouring just to make it fun and colourful. I would also think it might be fun if you have blueberry flavour for the icing, I'm not sure though just an idea. Now I really wasn't trying for the perfect looking dessert I just wanted something simple and when I found the puff pastry in the freezer I thought it would be perfect.



 

Once the pastry finished thawing out in the fridge, I unrolled it out on the counter. I folded it half one way to make a crease and then unfolded and turned and folded the other way in half.



I took a pizza cutter and cut along those crease lines to form four squares.



From there I put about 2 TBSP of pie filling in the center and folded it over diagonally.



I put the pastry in the oven preheated to 375 until golden in colour and puffed. Between 15 - 20 minutes.



While in the oven I gathered ingredients for the icing. I did 1/2 cup of icing sugar into a small bowl, then added milk and vanilla. I whisked till combined then added the food colouring and whisked again to a smooth consistency. Then drizzle icing over the pastry and enjoy.




Recipe makes 8 turnovers and super simple. If you do want to make the party yourself from scratch then by all means. Also you can use any flavor combo I just had blueberry on hand. Hope this is as fun for you as it was me 😊
